Vegan Tacos

ingredients needed

  • 1 cup Toor Dal (Pigeon Pea Lentils)
  • 2 tablespoons Rambell Foods Sambar Powder
  • 1 small onion (or 6–8 shallots), chopped
  • 1 medium tomato, chopped
  • 1 cup mixed vegetables (carrot, drumstick, pumpkin, beans, or brinjal)
  • 1 small lemon-sized tamarind ball (soaked in warm water)
  • ½ teaspoon Rambell Foods turmeric powder
  • 1 teaspoon mustard seeds and 1 teaspoon cumin seed
  • 2 tablespoons cooking oil or ghee
  • 2 dried red chilies and 2 tablespoons fresh coriander leaves, chopped

  • Cook the Lentils Wash the toor dal thoroughly and pressure cook it with turmeric powder and 2 cups of water for about 3–4 whistles until soft. Mash the cooked dal lightly and keep it aside.
  • Cook the Vegetables In a pot, add chopped vegetables, tomatoes, and about 1 cup of water. Cook them until the vegetables are tender but not mushy.
  • Add Tamarind Extract Extract the tamarind juice from the soaked tamarind and pour it into the vegetable mixture. Let it boil for 3–4 minutes to remove the raw tamarind taste.
  • Add Rambell Foods Sambar Powder Add Rambell Foods Sambar Powder and salt to the mixture. Stir well so the spices blend evenly with the vegetables and tamarind broth.
  • Add Cooked Dal Now add the mashed toor dal and mix thoroughly. Add additional water if needed to adjust the consistency. Allow the sambar to simmer for about 5–7 minutes so the flavors combine beautifully.
  • Prepare the Tempering In a small pan, heat oil or ghee. Add mustard seeds and let them splutter. Then add cumin seeds, dried red chilies, and curry leaves. Fry for a few seconds until aromatic.
  • Finish the Sambar Pour the tempering over the simmering sambar and mix gently. Garnish with freshly chopped coriander leaves.
